Wet First

1 can coconut milk

6 eggs

4 sticks butter (half salted)

Sugars

1 cup white

½ cup light brown

Dry

1 bag glutinous rice flour

1 bag grated coconut

Oil tins very well

Bake until golden with browned edges

Yummy for days, cold or room temp

Tips!

I recommend making it this way first to see what you like. Or split between two pans to try some of the following adjustments.

1. More salt. Like a teaspoon. Or more.

2. Also yummy with semi soft cheeses like gouda or cheddar. Added after. Not baked on top. I know some people put salted duck egg.

3. When i use muffin tins, i put a pinch of sugar after dropping in the oil. Encourages room temp crispiness.

Note on oiling: not enough to come over the sides during baking, but enough to essentially fry the bottom and sides.

If made in a sheet, cooking time will increase. But extra yummy reheated on a skillet.
